Grill Roasted Sea Bass Stuffed with Walnuts and Olives



This was a dinner that succeeded despite So Many Setbacks! The worst being bread pudding spilling all over the oven bottom and smoke billowing into the kitchen.

So these were roasted out on the grill, despite being January!


1 onion, diced
1 c green olives
2 c walnuts, chopped
1/2 c dates, finely chopped
Olive oil
3 sea bass
Garlic, Salt, Pepper to taste

Carmelize onions in olive oil. Mix in walnuts, garlic, dates. Season.
Season both sides of the fish with olive oil, salt, garlic. Stuff with walnut and green olive mixture. Roast on the grill (or in the oven!) at 500 for 12-15 minutes.

Pan Seared Scallops

Thawed a bowl ful of scallops.  Seasoned with pepper and garlic salt.  Heat olive oil on high (8) and cook scallops 2 minutes on either side.
These were fantastic with rice and a little coconut lime dressing.

Tilapia in Wasabi Mayo

2 tilapia loins, frozen
½ c mayo
2 tbs wasabi
3 tbs soy sauce
Mix ingredients and spread on fish. Bake at 375 for 45 minutes.

Tilapia Caddy Ganty

This is a traditional recipe from SE Alaska, but I now use this on tilapia which is easier to find out here on the East Coast.

4 tilapia filets, frozen
½ c mayo
½ c sour cream
2 tbs dried dill
1 tsp paprika
1 tbs garlic salt


Put frozen filets in a baking dish and coat with may mixture. Bake for 30-40 minutes at 350F. Great with peas and wild rice.

Salmon Quinoa Cakes

2 c cooked quinoa
2 eggs, beaten
1 tbs garlic salt
1 can sockeye salmon (365 brand)
¼ c mayo



Mix all ingredients thoroughly. Shape into patties. Bake at 425 on parchment paper lined baking sheet for 20 minutes, flipping at 10 minutes.   These were fantastic.  I should try them with crab!

Baked Sun Dried Tomato Tilapia

1/2 c olive oil mayonnaise
1/2 c fat-free Greek yogurt
1 tbs garlic powder
1 tsp salt
1 tsp pepper
1/2 c sun dried tomatoes, drained of oil
4 frozen tilapia filet (or other white fish)

Preheat oven to 425F.  Combine first 6 ingredients in a food processor.  Place fillets in a baking dish and cover with mayo mixture.  Bake for about 45 minutes, or until cooked through.
